Roasted Potato Trees with Loads of Cheesy Snow

Ingredients:

  • 12 small-to-medium Idaho® gold potatoes, peeled to a point on one end
  • 12 food-safe bamboo skewers
  • 3 tablespoons olive oil
  • Generous amount of salt and pepper
  • 2 tablespoons salt-free seasoning blend

Directions:

  1. Pre-heat oven to 350°F. Peel each potato and leave a point on one end. Slice a thin layer off the bottom so potato tree stands upright when skewered.
  2. Slice each peeled potato and begin threading them, smallest slice first onto the bamboo skewer.
  3. Scoot skewered potato slices down to the bottom of the skewer so that it stands upright.
  4. Season liberally and drizzle with oil.
  5. Bake on a parchment lined baking sheet 45 minutes.
  6. To serve, crumble goat cheese snow along with herbs onto a platter. Place potato skewers on top of the goat cheese. Great parmesan snow liberally over the top. Serve warm. Enjoy!
